Homemade Apple Crisp

Wow, its been almost a year since I blogged a new recipe.  I just got back from a weeklong vacation in CA that ended with me looking through my mom's recipe book and stealing a bunch of her recipes.  This one is one of my favorites and it will make your house smell so good while it is baking.  



Here is the recipe.  This picture is my moms handwriting so I typed it out for y'all as well.


1 bar of butter (room temperature)
1 cup of sugar
3/4 cup of flour
1 teaspoon cinnamon
7 apples (I used granny smiths)

Directions:

1.  Butter your baking dish.  I used an 8 (or 9 in) ceramic ramekin.
2.  Peel your apples and then cut into bite size chunks. Put aside when done.


3.  Cut your butter into bite size pieces and put in your bowl.  Add in your sugar, flour, and cinnamon.

4.  Use two a pastry blender (or two knives) to mix these ingredients into a crumble.

5.  Pour the apples into your baking dish and then put the crumble mixture on top.
6.  Place in oven and bake at 350 degrees for 45 minutes. 
7.  Serve warm with a side of vanilla ice cream!

Friday Favorites!

Today, I am linking up with some of my favorite bloggers (Andrea and Erika) to share my Friday Favorites with y'all.

1.  Moving into a new house means decorating!  And I have loved doing that.  I probably have spent more money than I should have but its for a good reason, right??

I knew when I moved in that I need an entry table and a table to sit inside my closet to hold my jewelry and perfumes so I hit up Home Goods.  And I found the most perfect pieces!!

2.  I absolutely LOVE my new kitchen.  It's crazy how much easier it is to work in a kitchen that you can actually turn around in!  The first thing I baked in my kitchen: homemade chocolate chip cookies.  I treated myself to a KitchenAid mixer as a housewarming gift and couldn't think of anything more perfect to make than cookies! I've also whipped up a few other things these past two weeks!

Summer Reading

As a kid, I absolutely loved reading.  I would read pretty much any book that I could get my hands on.  Then I got to middle school/high school and was required to read book over the summer.  The books were never very good and made me hate reading for a while.  Then came college and reading textbooks.  During those years, I probably only read 15 books for pleasure.  

So this summer, I decided to challenge myself to read 10 books.  My start date was June 1st and I gave myself 3 months.  I am at the halfway point now and have read 6 books!!  It probably helps that I have taken two trips this summer which meant lots of airplane time and beach time.

Here is the list of books I have read in the order that I read them.


This has been my favorite book that I have read.  If you are a sports fan, you need to read this.  I have followed Mark Herzlich's story from the beginning and he is such a courageous man.  This book chronicles his journey from being diagnosed with cancer to his treatment to his triumphant return to the football field.  




The One and Only by Emily Giffin

This is Emily Giffin's seventh book and I could not wait for it to come out.  I even pre-ordered it on Amazon two months before it was released.  Let's just say that I think I hyped it up way to much.  It was a quick read but I just didn't really enjoy the story expect for the fact that it was set in Texas and mentioned Baylor a couple times.  


The Fault In Our Stars by John Green


I finally had the chance to read The Fault In Our Stars while I was in Cozumel.  I had heard such good things about this book and was also told to read it before I went to see the movie.  As someone who cries at everything, I was expecting to cry throughout the book but didn't shed one tear. I think thats because I had prepared myself for it to be really sad.  I still loved it though and am so glad that I read it.  Now I just need to go see the movie!!


After I Do by Taylor Jenkins Reid

I could not put this book down.  I started it at 10 PM one night and read it until I fell asleep.  Then, when I woke up the next morning, the first thing I did was finish it.  This story is about a married couple who decide to separate for a year, have no communication at all, and then get back together after the year to decide the future of their relationship.  To say I loved it would be an understatement.  GO READ THIS!



The Matchmaker by Elin Hilderbrand

Elin Hilderbrand is one of my favorite authors.  Her books are perfect for the beach and this one was no different.  It is definitely a chick book and I am not ashamed to admit I loved it.  



Nantucket Sisters by Nancy Thayer

This book was about two best friends who lived their childhood on the island of Nantucket.  One of the girls left Nantucket and moved to NYC while the other one stayed on the island.  Their lives, however, were always intertwined as they fell in love, had children, and experienced the joys/sorrows of life.  When I finished this book, I was so upset.  I wasn't ready for it to end.  So, Nancy Thayer, please feel free to write a sequel!!

American Flag Cookie Cake

Y'all, Fourth of July is tomorrow!  It is one of my favorite holidays.  I love dressing up in red/white/blue and spending time with my friends and family.  This year, I will be in Nashville for the wedding of a good friend of mine from college so I decided to celebrate with my good friends and coworkers a day early.  

It didn't take me long to find exactly what I wanted to make... an American Flag Cookie Cake.  The recipe I found was easy, quick, and just looked so dang good.




Ingredients


The Cookie
1 1/3 cups of all-purpose flour
11 tablespoons of unsalted butter (softened)
1/3 cup light brown sugar (packed)

The Toppings
4 oz of cream cheese (room temperature)
8 tablespoons of unsalted butter (room temperature)
3/4 cup of powdered sugar
1 teaspoon vanilla extract
1 cup blueberries
3 cups raspberries
1/4 cup white chocolate chips

Equipment
9x13 rimmed baking sheet

Directions
The Cookie
1.  Preheat oven to 400 degrees
2. Whisk together flour and brown sugar.  
3.  Using a fork (or a pastry blender), mix in the butter until it is the consistency of wet sand.

4.  Press the cookie dough firmly in the bottom of your baking sheet. 

5.  Cook for 10-15 minutes until it is golden.  
6.  Take out of oven and place pan on a wire rack to cool down. 
7.  If you have a platter that you want to serve your cake on, transfer it now.  (I left mine in the pan.)

The Frosting
1. Using a mixer (I used a hand mixer), mix the cream cheese until it is smooth.
2. Add the butter and mix until they are combined.
3.  Add in the powdered sugar and vanilla and mix until combined. 
4.  DO NOT OVER BLEND or it will become runny.

Decorating
1.  Spread the cream cheese in an even layer covering the entire cake.
2.  Position the blueberries in the top left corner to make the blue portion of the flag.  (I did 10x10)
3.  Position the raspberries in horizontal rows leaving about a 1 inch space between each row. 
4.  Put the white chocolate chips between the blueberries to make the stars. 

Either serve immediately or refrigerate until ready to serve!

Just Another Day in Paradise

In February, I came up with an idea to take a vacation with my beautiful mother.  She would be celebrating a birthday in June so who doesn't want to celebrate with a few days in paradise. Then I decided to bring some friends along.  From the very beginning, I knew it would be five of the best time I've had in my life because I was going to be spending it with 4 of the greatest women/biggest blessings in my life.

The first thing we had to do was decide where to go in Mexico.  I immediately decided on Cozumel, Mexico.  I had heard a ton of amazing things and knew it would be the perfect place.  But who was going to research hotels/flights/etc.  Well, enter my best friend Kaleigh.  She became our travel agent and scoured the internet to find us the best deal.  And boy did she find us an amazing place for a really good deal.  At the end of March, rooms were booked, flights were purchased, and the dreams of paradise began! (If you need a travel agent, just ask me for her info.  She's really cheap.  All I had to do was pay her a $5 fee!!!!!)

June 19th finally arrived!  After waking up at the crack of dawn and flying from Austin to Dallas, I met up with Kaleigh, Rachel, and Liz at DFW.  Adios USA!

We arrived in Cozumel and I couldn't believe how easy it was to go through Customs/Immigration.  It literally took us about 20 minutes to get from the plane and into our taxi headed to our hotel.  

Now for the good stuff... our amazing hotel, Cozumel Palace!  I cannot tell you enough good stuff about this place.  It was incredible.  I mean just look at this view from our balcony!

I honestly could go on and on and on about this place.  But I'll spare you and just give you some highlights.

The Food/Drinks: This is an all-inclusive resort.  When we checked in, we got wristbands and that allowed us to get into any of the four restuarants and get as many drinks as we wanted from the bars.  The food was incredible.  On our last night, we went all out and had some amazing wine and appetizers.

The rooms: Y'all, our room had the best view.  We had an ocean view with a hammock on our balcony.  We also overlooked the wedding terrace and was able to witness 3 weddings. You better believe that I was creeping on them! (weird, I know)  We also had a giant bathtub in the middle of our room.  Someone (Kaleigh) made that her bed for 3 nights and housekeeping even made it for her!

It was an incredible trip and I cannot wait to go back as soon as possible.  Here are a few more pictures from our days in paradise!
